What is creamed honey?

Creamed honey has a smooth, buttery texture and many people choose it for its ‘spreadability’.

Creating Creamed honey involves a process the mimics the natural tendency of honey to crystallise. We take a fine-grained honey crystal and use it as a starter. It is gently stirred into liquid honey in a whipping motion. The honey is then packaged into jars and stored in a cold environment for 14 days. The cool temperature speeds up the natural crystallisation process and the starter encourages the honey to replicate the same fine-grained crystals. The natural characteristics of some honeys, like Tasmanian Leatherwood, make them perfect to make creamed honey from.

How to store creamed honey

We recommend that creamed honey be stored at room temperature. The consistency of creamed honey is regulated by ambient temperature. Warmer temperatures result in a softer honey and cooler temperatures cause the honey to become firmer.

Over the cooler months, we recommend keeping the jar in a warm spot to maintain its spreadability. We only recommend storing creamed honey in a refrigerator in very hot weather —if your creamed honey is becoming too soft or returning to its liquid state.
